Here is a simple screen casting application called Screencast-O-Matic for PC/MAC. You define the area on your screen, hit record and then go about your instruction. Be sure to narrate as you record as it has a fairly decent audio feature. This may be preferable to Jing since you can upload quickly to YouTube right from the application
